Ingredients

  • 4 ears corn
  • 1-2 Tablespoons avocado oil
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • vegan butter or your favorite butter - optional for serving
  • fresh chopped parsley - optional for serving

Instructions

  1. Prep the corn by removing the husks, then rinse the corn really well. Dry it with a clean paper towel. Brush the corn all over with the avocado oil then season it all over with some salt and pepper.
  2. Preheat the air fryer to 400 degrees F. When the air fryer is ready, spray the basket with cooking spray and place the corn into the basket in an even layer. Close and cook for 10-12 minutes at 400 degrees, turning the corn over halfway through the cooking time. Check the corn at least once to make sure it does not burn. You may need to do this in batches if you are working with larger pieces of corn.
  3. Once the corn is done, remove it from the air fryer, roll it in some butter while it is still hot and sprinkle it with some fresh parsley to serve.
