Ingredients

  • 2 large russet potatoes
  • 3 tablespoons avocado oil or other neutral oil
  • 1 tablespoon granulated sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons Kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon red pepper flakes

Instructions

  1. Scrub the potatoes and cut them into quarter-inch sticks, then place them in a bowl of cold water.
  2. Whisk the sugar, paprika, salt, pepper, garlic powder, onion powder, oregano, thyme, and red pepper flakes in a separate bowl.
  3. Preheat the air fryer to 400°F.
  4. Drain and pat the potato sticks dry, then put them in a bowl. Add oil and about three-fourths of the spice mix, and toss.
  5. Place the potatoes in the air fryer. Cook for 15 to 18 minutes, stirring once halfway through.
  6. If not crisp enough, raise the temperature to 425°F and cook for an additional 3 to 5 minutes.
  7. Sprinkle with the remaining spice mix and toss again.

Recipe Notes

Using a full teaspoon of red pepper flakes brings more heat. Consider using less if you prefer milder flavor.
