Ingredients
For the stir fry
2tablespoonssesame oil or avocado oil - divided
114oz block extra firm tofu - with liquid pressed out and cut into cubes
Kosher salt
Ground black pepper
1cupfrozen broccoli - cooked and chopped
1large red bell pepper - cut into strips
½cupchopped green onion
½cupSnow peas
2cupscooked jasmine rice - for serving
For the stir fry sauce
¼cuptamari or soy sauce
2tablespoonvegetable stock
1tablespoonmaple syrup
1tablespooncornstarch
1teaspoonhot sauce
1teaspoonginger paste
1teaspoongarlic paste
Instructions
Cook the tofu: Heat 1 tablespoon of oil in a skillet over medium heat. Add the tofu and toss and cook it until it is golden brown. Remove the tofu from the pan once it is done and place it onto a clean plate.
Cook the veggies: In the same pan you cooked the tofu in, add 1 tablespoon of oil, then add the broccoli, bell pepper, green onion, and the snow peas. Season the veggies with a small pinch of salt and pepper and toss and cook them for 2-3 minutes until they are soft.
Mix up the stir fry sauce: Add all of the stir fry ingredients to a medium size bowl and whisk well until fully combined.
Finish and serve: Add the tofu back to the pan with the veggies, pour the sauce over the tofu and veggies and toss everything in the sauce. Let the stir fry cook for 1-2 minutes. Remove and serve over fluffy jasmine rice.
