Ingredients

For the stir fry

  • 2 tablespoons sesame oil or avocado oil - divided
  • 1 14oz block extra firm tofu - with liquid pressed out and cut into cubes
  • Kosher salt
  • Ground black pepper
  • 1 cup frozen broccoli - cooked and chopped
  • 1 large red bell pepper - cut into strips
  • ½ cup chopped green onion
  • ½ cup Snow peas
  • 2 cups cooked jasmine rice - for serving

For the stir fry sauce

  • ¼ cup tamari or soy sauce
  • 2 tablespoon vegetable stock
  • 1 tablespoon maple syrup
  • 1 tablespoon cornstarch
  • 1 teaspoon hot sauce
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste

Instructions

  1. Cook the tofu: Heat 1 tablespoon of oil in a skillet over medium heat. Add the tofu and toss and cook it until it is golden brown. Remove the tofu from the pan once it is done and place it onto a clean plate.
  2. Cook the veggies: In the same pan you cooked the tofu in, add 1 tablespoon of oil, then add the broccoli, bell pepper, green onion, and the snow peas. Season the veggies with a small pinch of salt and pepper and toss and cook them for 2-3 minutes until they are soft.
  3. Mix up the stir fry sauce: Add all of the stir fry ingredients to a medium size bowl and whisk well until fully combined.

  4. Finish and serve: Add the tofu back to the pan with the veggies, pour the sauce over the tofu and veggies and toss everything in the sauce. Let the stir fry cook for 1-2 minutes. Remove and serve over fluffy jasmine rice.
