Ingredients
1Tablespoonolive oil
1small onions - peeled and diced
1Tablespoonminced ginger
2clovesgarlic - peeled and minced
½teaspoonsalt(more or less, to taste)
¼teaspoonblack pepper
½teaspooncurry powder
½teaspooncumin
¼teaspooncoriander
3cupsvegetable stock
1.5cupsred lentils
115 ounce can fire roasted diced tomatoes
Cooked jasmine rice - optional for serving
Instructions
Heat a large pot to medium heat and add the olive oil. Once the oil is hot, add the onion, garlic and ginger to the pot and toss and cook it for 2-3 minutes. Then add in the salt and pepper, curry powder, cumin and coriander and toss and cook the onions in all of the spices for 1-2 minutes.
Pour in the stock and use a wooden spoon to scrape the brown bits off the bottom of the pan. Then add in the lentils and tomatoes and stir everything together.
Cover the pot and bring everything to a boil then reduce to simmer for 30 minutes or until the lentils are nice and soft. You may need to stir every once in a while to ensure the lentils do not stick to the bottom of the pan.
Remove the pot from the heat and scoop and serve the dal over cooked rice.
