
This Meatloaf Recipe is hearty, flavorful, and super simple to make. It's one of those classic comfort food meals that always hits the spot. Juicy, savory, and topped with a tangy BBQ glaze that caramelizes perfectly in the oven.
Preheat the oven to 375°F. Line a rimmed cookie sheet with aluminum foil and grease with cooking spray. Set aside.
In a large mixing bowl, mix together the breadcrumbs and water. Let sit for 2 minutes.
Mix in the grated onion, eggs, worcestershire sauce, italian seasoning, paprika, chili powder, garlic powder, salt, pepper and 1⁄4 cup of BBQ sauce.
Add the ground beef and use your hands to mix everything together until well combined.
Transfer the meatloaf mixture to the prepared baking sheet and form into a 5-inch by 10-inch loaf size.
Spread the remaining 1⁄4 cup of BBQ sauce over the top of the meatloaf.
Bake in the middle level of the oven for 65-75 minutes, until the center of the meatloaf registers 165°F on an instant read thermometer.
Let the meatloaf cool for 15 minutes before slicing. Garnish with a sprinkle of chopped parsley before serving.
