Ingredients

  • 1 15-ounce can whole kernel corn drained
  • 1 15-ounce can creamed corn not drained
  • 1 8.5 ounce box Jiffy honey cornbread mix
  • 1 cup sour cream
  • 1/2 cup salted butter melted
  • 2 large eggs beaten
  • 2 cups shredded sharp cheddar cheese divided
  • 1/4 cup sugar
  • 1/4 cup honey for drizzling

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 inch baking dish.
  2. In a large bowl, stir together the melted butter, beaten eggs, and sour cream until smooth.
  3. Add the drained whole kernel corn, undrained creamed corn, and sugar, and stir to combine.

  4. Add the Jiffy cornbread mix and 1 3/4 cups of the cheddar cheese. Stir just until combined.

  5. Spread the batter into the prepared baking dish. Sprinkle with the remaining cheddar cheese.

  6. Bake for 40 to 50 minutes, until the top is golden brown and the center is set. A knife inserted in the center should come out clean. If the top browns too quickly, tent loosely with foil.
  7. Let the casserole cool for about 10 minutes. Drizzle the honey over the warm casserole and serve.
