Banana Chocolate Chip Muffins

Banana chocolate chip muffins are a yummy breakfast treat that my whole family goes crazy for! Perfect to make ahead and eat all week.

Ingredients

Dry Ingredients

  • 1 1/2 cups whole wheat pastry flour* (spooned and leveled to measure)
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 3 medium bananas mashed
  • 1/2 cup Greek yogurt I used 2% Fage
  • 2 Tablespoons avocado oil canola works too
  • 1 teaspoon pure vanilla extract
  • 1/2 cup sugar
  • 1 egg
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 400 degrees.

  2. Mix the flours, baking soda, baking powder and salt in a medium mixing bowl. Set aside.
  3. Peel and mash bananas with a fork in a separate bowl.

  4. In the same bowl with the mashed bananas, add the Greek yogurt, oil, vanilla, sugar and egg.

  5. Mix on low until well-combined, about 1 minute.
  6. Incorporate the dry ingredients, and mix on low until just well-combined.

  7. Fold in chocolate chips.

  8. Spoon into a muffin tin.

  9. Bake at 400 for about 20 minutes, until toothpick comes out clean.

  10. Add a few chocolate chips on top for garnish, if desired.

Recipe Notes

* If you want to use regular whole wheat flour, I would suggest using half all-purpose flour and half whole wheat (3/4 cup of each). Heads up: I have tried all regular whole wheat, but it turned out too dense. Using only all-purpose (1 1/2 cups) works great too!
