Baked Oatmeal

Ingredients

  • 2 bananas ripe
  • 2 cups old fashioned oats
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 2 tablespoons maple syrup - plus more for serving
  • 1 1/4 cups almond milk (or plant milk of choice)
  • Pinch of salt
  • 1 cup blueberries frozen
  • cup strawberries frozen
  • Chopped pecans - optional for serving

Instructions

  1. Preheat the oven to 350 degrees F and spray an 8x8 baking dish with cooking spray.
  2. Add the bananas to the prepared baking dish and mash them up with a fork. Add the oats, chia seeds, vanilla, lemon juice, maple syrup, plant milk and a pinch of salt and stir that all up.

  3. Add the frozen berries in an even layer over the oatmeal and bake at 350 degrees F for 25-30 minutes until it is set and lightly golden.
  4. Once the baked oatmeal is done, remove it from the oven and let it cool for at least 10 minutes. Serve and top with more maple syrup and chopped pecans.
