Dark chocolate covered strawberries are a tasty treat that are perfect for Valentines Day, or any day.
Wash and fully dry the strawberries. Make sure they are dried really well so the chocolate will stick to them. (I even let mine sit outside the fridge for a while to take the chill off and prevent condensation.)
Pour chocolate chips into a tempered glass bowl, such as a pyrex, and set aside. (Note: I meted the whole 11.5 ounce bag)
Bring 1 to 2 cups of water to boil on a stovetop in a pot.
Turn off the heat to the stove, and place the glass bowl of chocolate chips on top of the hot pot of water, and allow the chocolate to melt gently, stirring occasionally. Be patient, this will take 7 to 10 minutes to melt all the chips.
Dip each strawberry, and place on a hard surface (I used a sheet pan lined with parchment) until the chocolate hardens (about 30 minutes).

I used an 11.5 ounce bag of extra dark chocolate chips (63% cacao). I melted the entire bag, and I used about half the chocolate.
Baker's dipping dark chocolate is what I used for years. They sell 7 ounces in a microwaveable cup. If you use this (or any other similar brand) just melt the chocolate according to package instructions, being careful not to overheat and burn the chocolate.
