Ingredients

  • 2 cups cooked quinoa, cooled
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup roasted red peppers, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup red onion diced
  • 1/4 cup Greek Red Wine Vinaigrette (Recipe is linked in instructions and will make plenty extra)
  • Feta cheese for garnish (about 3 Tablespoons)

Instructions

  1. Assemble cooked quinoa, olives, peppers, parsley, red onion and Greek red wine vinaigrette in a large mixing bowl, and toss until well-combined.

  2. Top with feta cheese, and serve.

  3. Refrigerate leftovers for up to a week.
