  • 1 cup whole crimini mushrooms
  • 1 squash
  • 1 zucchini
  • 1 small red onion
  • 1 head of broccoli
  • 1 red bell pepper
  • 1 tablespoon fresh chopped thyme leaves
  • 2 tablespoons olive oil
  • 1/2 teaspoon granulated garlic
  • Salt & pepper to taste (about 1/4 teaspoon salt, 1/8 teaspoon black pepper)


  1. Preheat oven to 400 degrees.
  2. Chop all veggies into similar sized chunks.
  3. Place on a baking sheet lined with parchment paper.
  4. Drizzle with olive oil.
