  • 2 roma tomatoes, diced
  • 1 jalapeno peppers de-seeded and diced
  • 1/4 large red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt (or more to taste)
  • juice of 1 lime
  • 3 ripe avocados


  1. Dice the tomatoes, peppers, onion and cilantro and set aside.
  2. Slice open the avocados, and remove the seeds; spoon out the avocado flesh into a medium mixing bowl.
  3. Add the salt, lime juice and cumin, and mash with a fork or potato masher. I like to leave my avocados slightly chunky.
  4. Fold in the veggies.
  5. Taste test a bite (<- it's a tough job, but somebody's got to do it!). Add more salt, if desired.
