  • 8 ounces uncooked large elbow macaroni
  • 1 Tablespoons unsalted butter
  • 1.5 Tablespoons all purpose flour
  • 1 1/4 cups milk
  • 62 grams cheddar cheese shredded or cut into small cubes, measured on a food scale
  • 62 grams Fontina cheese shredded or cut into small cubes, measured on a food scale
  • salt and pepper to taste ( I used about 1/4 teaspoon salt and just a dash of black pepper)

  1. Cook pasta according to package instructions; drain and set aside
  2. Melt the butter over low heat.
  3. Add flour to the butter, stir to combine and cook for about 1 to 2 minutes
  4. Add milk, increase the heat to medium, and use a whisk to combine and break up any lumps.
  5. Bring to a slow boil/simmer, reduce heat to medium-low, and cook until thickened (about 3 minutes), whisking frequently.
  6. Whisk in the cheese and stir until the cheese is melted and smooth, about 2 to 3 more minutes.
  7. Add salt and pepper to taste.
  8. Add the cooked pasta, and stir until combined and heated through, about 2 minutes.
  9. Serve immediately.
