Omelet muffins are a great healthy breakfast, packed with satisfying protein.

  • 9 eggs
  • 1/2 cup pourable egg whites
  • 1/3 cup diced red bell pepper
  • 1/3 cup diced yellow onion
  • 4 slices of Applegate Farms uncured turkey bacon cooked according to package directions
  • 1/2 cup shredded part skim mozzarella cheese
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: fresh chives for garnish


  1. Preheat your oven to 350 degrees
  2. Scramble the eggs, egg whites, water, salt and pepper. Set aside.
  3. Spray a skillet with cooking spray and sautee the onion and pepper on medium until tender, about 5 minutes. Set aside.
  4. Dice the cooked bacon.
  5. Add bacon and veggies to the muffin cups.
  6. Pour egg mixture over the ingredients.

  7. Top each "muffin" with cheese.
  8. Bake until eggs are solidified, about 25 minutes.
  9. Store in refrigerator and reheat when ready to eat.
