Chocolate Brownie Cookies

These chocolate brownie cookies are like a cross between a brownie and a cookie, and they are made with coconut oil and Greek yogurt.

Ingredients

  • 1 cup flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 5 tablespoons organic unrefined coconut oil
  • 7 Tablespoons unsweetened cocoa powder
  • 2/3 cup white granulated sugar
  • 1/3 cup brown sugar
  • 1 teaspoon pure vanilla extract
  • 1/3 cup Fage 2% plain Greek yogurt

Instructions

  1. Mix the flour, salt and baking soda in a bowl and set aside.
  2. In a large saucepan, melt the coconut oil over medium heat until fully liquified.
  3. Remove oil from heat, and stir in sugars, cocoa and vanilla until well-combined.
  4. Stir in Greek yogurt.
  5. Mix in dry ingredients until well-combined.
  6. Form dough balls (about 2 tablespoons) and place on a cookie sheet lined with a silicon baking mat or parchment paper.
  7. Press each dough ball in a criss-cross pattern with a fork.
  8. Bake at 350 degrees for about 8-9 minutes.
  9. Cool for about 3 minutes on the cookie sheet, and then transfer to wire rack to cool for a few more minutes.
