Southern Skillet Corn Bread

My traditional southern skillet corn bread is the tangy, savory variety, and I make it in a cast iron skillet.

  • 1 tablespoon avocado oil or canola oil
  • 1/4 cup all purpose flour
  • 3/4 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup buttermilk


  1. Add the oil to a cast iron skillet, and place in the (unheated) oven. Preheat oven to 425 degrees.
  2. Meanwhile, mix the flour, cornmeal, baking powder and salt in a medium bowl.
  3. Mix in the buttermilk and the egg, stirring to combine. Do not over mix (a few lumps are fine!).
  4. Once the oven is preheated, remove the cast iron skillet, and carefully swish the oil around to make sure the pan is covered.
  5. Pour the batter into the pan.
  6. Return to oven, and bake until golden (about 24 minutes).
  7. Remove from the oven. Slice and serve immediately.
