Ingredients

  • ½ cup vegan butter - softened
  • ¾ cup white sugar
  • 3 tablespoons almond milk
  • 1.5 teaspoons vanilla extract
  • 1 ½ cups all purpose flour
  • ½ teaspoon baking soda
  • Pinch of salt
  • ¾ cup chocolate chips (or more, measured with your heart)

Instructions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper or a silpat.
  2. In a large bowl beat the butter and sugar together until creamy, then add in the almond milk and vanilla and mix until the batter is light and fluffy, about 60-90 seconds.
  3. Combine the flour with the baking soda and salt in a separate medium bowl.
  4. Add the flour mixture to the wet mixture and stir to combine into a thick,cookie dough. Fold in the chocolate chips.
  5. Drop the cookie dough in 1-1.5 tablespoon amounts onto the baking sheet about 2 inches apart. Bake the cookies for 12-14 minutes, remove and let cool on a cooling rack for at least 10 minutes before serving.
