  • 1 lb chicken breast raw, sliced
  • 2 teaspoons sesame oil
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ cup chicken stock or white wine, vegetable stock
  • 1 tablespoon tamari sauce or soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon cornstarch or arrowroot powder
  • 1 tablespoon avocado oil
  • 2 cloves garlic - peeled and minced
  • 1 tablespoon fresh ginger minced
  • ½ cup shiitake mushroom - sliced
  • ½ cup yellow onion sliced
  • ½ cup carrots sliced
  • ½ cup sliced sugar snap peas or snow peas
  • 2 cups Lo Mein Noodles cooked
  • Chopped scallions - for garnish


  1. Place the chicken into a medium bowl and add 1 teaspoon of the sesame oil, salt and pepper and toss the chicken well to coat it in the seasoning. Set aside.
  2. In a separate medium size bowl combine the tamari sauce, hoisin sauce, chicken stock, remaining sesame oil and cornstarch. Mix well to combine.
  3. Heat the avocado oil in a wok or large pan over medium-high heat. Add the chicken and cook until no longer pink inside, 3-4 minutes. Remove the chicken from the pan and set aside on a clean plate.
  4. Add the garlic and ginger to the same pan you cooked the chicken in and cook for 2-3 minutes.
  5. Then add the mushrooms, onions, carrots, and sugar snap peas to the pan with the garlic and ginger and toss and cook for 3-4 minutes until the veggies begin to soften.
  6. Return the cooked chicken to the pan and add the cooked egg noodles and the sauce. Cook for 3 minutes, until everything is well-coated in the sauce.
  7. Serve with a garish of scallions and a sprinkle of sesame seeds.
