Apple Muffins

These apple muffins make a delicious breakfast or snack, and they are light, fluffy and perfect for fall.

Ingredients

For the muffins

  • 1 ½ cups all purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 egg large
  • ¼ cup maple syrup
  • ½ cup light brown sugar
  • ¼ cup butter - melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened applesauce
  • 1 cup apple about half a medium apple, diced, any variety is fine

For the crumble topping

  • ½ cup old fashioned oats
  • 2 tablespoons butter melted
  • 2 tablespoons all purpose flour
  • ¼ cup light brown sugar
  • 1/4 teaspoon salt
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375 degrees F and grease a 12 cup muffin pan with butter or coat with cooking spray.
  2. Combine the flour, baking powder, salt and cinnamon in a medium size mixing bowl.
  3. In a separate larger mixing bowl, use a whisk to combine the egg, maple syrup, brown sugar, butter, vanilla and applesauce. Mix well until it forms a smooth batter. Then mix in the flour mixture and combine into a thicker, smooth batter.
  4. Finally, fold in the diced apples.
  5. Mix up the crumble topping by combining all of the ingredients into a medium size bowl and mixing them up while breaking the butter down so it fully mixes in with the rest of the ingredients.
  6. Divide the batter between the muffin cups by filling each muffin cup with about 2 tablespoons of the batter. Then top each muffin with some of the crumble topping, pressing the topping lightly into the muffin batter.
  7. Bake at 375 degrees F for 20-25 minutes until the top of the muffins spring back when you touch them or a toothpick inserted into the center of one of the muffins comes out mostly clean with a few wet crumbs on it.

  8. Let the muffins cool for a few minutes then run a butter knife around the edge of the muffins to easily release them once they are fully cooled.
