Ingredients

For the salad

  • 8 cups kale - sliced into thin strips
  • 1 teaspoon olive oil
  • pinch salt and pepper
  • ¼ cup Sliced almonds
  • ¼ cup Red onion - sliced
  • ¼ cup dried cranberries or dried blueberries
  • ¼ cup crumbled goat cheese

For the dressing

  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon Lemon juice and zest
  • ¼ cup Olive oil
  • 1 Tablespoon Honey
  • 1 Tablespoon Apple Cider Vinegar
  • Pinch salt and pepper (more or less, to taste)

Instructions

  1. Massage the kale: Add the kale to a large bowl, drizzle with a little olive oil and a sprinkle of salt and pepper. Use your hands to lightly massage the kale all over for 1-2 minutes to help break it down.
  2. Mix up the dressing: Add all dressing ingredients to a mason jar, cover and shake well to emulsify. You can also do this using a small bowl and a whisk.
  3. Build and dress the salad: Add the rest of the salad ingredients to the bowl with the kale. Drizzle the dressing over the salad and toss well to cover all of the salad ingredients in the dressing.
  4. Serve cold and enjoy!
