Ingredients

  • 6 eggs hardboiled, peeled and diced
  • 3 Tablespoons mayonaise
  • 1 teaspoon dijon mustard
  • 2 Tablespoons sweet pickle relish
  • 2 Tablespoons green onion diced, about 1 stalk
  • salt and pepper to taste - mine did not need much additional salt (what was already in the mayo was just about enough for meπŸ‘ŒπŸ»)
  • optional add ins: chopped fresh dill, diced roasted red pepper, paprika for garnish

Instructions

  1. Add diced eggs and all other ingredients to a mixing bowl, and stir to combine.

  2. Salt and pepper to taste.

  3. Serve on a sandwich, in lettuce cups or crackers.
