Ingredients

  • 1 bulb garlic (about 12 cloves, give or take)
  • 1 teaspoon olive oil plus more for storage, if desired
  • pinch salt

Instructions

  1. Cut the top of the garlic, exposing the cloves inside.

  2. Drizzle the exposed cloves with oil, plus a little pinch of salt.

  3. Wrap in foil or parchment + foil to secure, if you aluminum exposure is a concern for you. You can use foil only if you wish.

  4. Bake in a preheated oven at 400 degrees until soft and golden, about 40 minutes.

  5. Watch out for steam when opening the foil and/or parchment! Let cool, until you can handle the garlic without burning yourself, at least 15 minutes.

  6. Squeeze to remove the roasted garlic.
  7. Store in a small container in the refrigerator, and cover with more olive oil. Good for up to a month.

Recipe Notes

Use in salads, sauces, hummus, as spread mixed with butter for garlic bread.

You can use immediately. Any cloves you do not use immediately, store covered in olive oil in the refrigerator for up to a month.
