  • 2 cups raw spinach (I prefer baby spinach)
  • 1 fresh mandarin orange or clementine* peeled and segmented
  • 1/2 avocado sliced
  • 1 Tablespoon pine nuts
  • 2 Tablespoons Balsamic Vinaigrette


  1. Make a bed of spinach on a salad plate or bowl.

  2. Top with the mandarin oranges, avocado slices, pine nuts and drizzle balsamic vinaigrette on top.

  3. Serve immediately.

Recipe Notes

*Canned mandarins can be used in this salad, if preferred.
