Ingredients

  • 1.5 to 2 cups mixed baby greens
  • 1/4 cup fresh blueberries
  • 1/4 cup sliced fresh strawberries
  • 2 Tablespoons my homemade balsamic vinaigrette
  • 1 Tablespoon goat cheese crumbles (more or less, to taste)
  • 2 Tablespoons pine nuts (more or less, to taste)

Instructions

  1. Place greens on a salad plate.

  2. Add berries, pine nuts and goat cheese on top.

  3. I like to serve the salad undresses and let people spoon the dressing on just prior to eating. Otherwise, the lettuce goes limp.

Recipe Notes

Ingredients are approximate, and feel free to add more (or less!) of anything to your liking. 😉👌🏻

One serving size is listed, but it is simple to do a bigger version in a big salad bowl. Just roughly multiply each ingredient amount to the number of people you are serving.
