Roasted Asparagus with Orange Vinaigrette

  • 1 pound fresh asparagus trimmed
  • 1 Tablespoon olive oil
  • 1 teaspoon fresh orange zest
  • 1/4 teaspoon granulated garlic
  • salt and pepper to taste (about 1/4 teaspoon salt 1/8 teaspoon pepper)
  • 2 to 4 Tablespoons Drizzle of orange sherry vinaigrette


  1. Preheat oven to 400 degrees.
  2. Toss the asparagus with the olive oil, garlic powder, orange zest and salt and pepper until evenly coated.
  3. Place on a baking sheet lined with parchment paper.

  5. Bake until tender, about 10 minutes.
  6. Remove from oven, and drizzle with the orange vinaigrette prior to serving.*

Recipe Notes

*Note: If you make the dressing ahead of time, be sure and get it out of the refrigerator 30 to 45 minutes ahead of time. Otherwise it will be very thick from refrigeration.

**This recipe is delicious served warm or at room temperature.
