This Italian dressing from scratch tastes way better than the store-bought kind, and it will have you wanting to eat more salad!

Ingredients

  • 6 Tablespoons extra virgin olive oil
  • 2 Tablespoons white vinegar
  • 2 Tablespoons chopped fresh flat-leaf parsley
  • Juice of half a small to medium-sized lemon
  • 1 teaspoon dried basil
  • 1/8 teaspoon dried oregano
  • 2 cloves fresh garlic minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Combine all ingredients in an air-tight container with a lid, and shake to combine.
  2. Refrigerate leftovers, and use for up to one week.
  3. When using leftovers. be sure and remove from refrigerator at least thirty minutes or so ahead to allow the olive oil solids to melt.
