Today I am sharing a recipe that I am calling Vegan Sunrise Smoothie.
Drinking one of these makes me feel like I am on a beach someplace. It is chocked full of healthy plant-based ingredients: carrots, pomegranate, clementine, strawberries, banana, lemon, almond milk and chia seed.
The combination results in this lovely coral-y orange color that reminds me of a beautiful sunrise. Plus, I drink them for breakfast sometimes.
The flavor of this vegan sunrise smoothie is somewhat tart, which I happen to like very much. If it is too tart for you, feel free to throw in a date, some honey, or agave to sweeten it up. Or cut back on the lemon, if you wish.
I am not Vegan, but I do make it a point to cram as many plants into my day as possible. And I give myself bonus points if I can sneak a veggie into a smoothie. Most of the time I do that in the form of greens (kale and spinach are my faves).
But I wanted to stick with the lovely color palette I had going on, so I went with carrots for this one. And it works!
Also, with 2.5 times the daily recommended vitamin C (check out the full nutrition label in the recipe below), it can’t hurt to work a few of these in to ward off all of the sick germs floating around.
It’s funny – I used to never measure anything when I was making smoothies. Until I started writing smoothie recipes, that is! I used to just throw things in, press blend and hope for the best. I would taste and add things if needed.
So for this recipe, I measured in volume (cups, tablespoons, etc.) AND in weight (grams) on my digital food scale. Hopefully this is helpful to those of you aiming for that perfect consistency.

Vegan Sunrise Smoothie
Vegan sunrise smoothie is chocked full of healthy plant-based ingredients: carrots, pomegranate, clementine, strawberries, banana, lemon, almond milk and chia seed.
- 1/2 cup unsweetened almond milk
- 1 clementine peeled
- 1/2 lemon peeled
- 3 tablespoons pomegranate tendrils 35 grams
- 1/2 medium banana
- 1/2 cup raw carrots 93 grams
- 1 cup frozen unsweetened strawberries 182 grams
- 1 tablespoon chia seed
Put all ingredients in the blender, and blend on "whole juice" or equivalent setting.
This recipe was written specifically for Blendtec and Vitamix blenders. Results are not guaranteed for other blenders, but let me know if you try it!
