First, gather your ingredients.

For tastiest results, always use the best quality ingredients you have access to.

What is vegan queso made of? To make this recipe, you will need the following:
- Cauliflower
- Red bell pepper
- Fresh garlic
- Onion
- Lemon juice
- Nutritional yeast
- Almond butter
- apple cider vinegar
- salt
- paprika
- chili powder
- cumin
- water
Cooking
First, cook the veggies. Place the cauliflower florets, bell pepper, onion and garlic into a pot with a steamer tray (Amazon affiliate link) with 1 cup of water, place the lid on and steam until tender, about 17 minutes from point of boil.

Remove lid and let cool for 1-3 minutes.
Blending vegan queso
In a blender add the cooked veggies, and all remaining ingredients.

Blend until smooth.

From here, you can transfer to a serving dish.

You can eat it as it is with chips. If you want to up your presentation game, add some fresh cilantro and diced tomatoes on top.

- 2 teaspoons apple cider vinegar 10g
- 1 teaspoon of salt 7g
- 1 teaspoon of paprika 3g
- 1/3 teaspoon chilli powder 1g
- 1/2 teaspoon cumin 2g
- 1 Tablespoon water (or more for desired texture) 14g
