Vegan nachos are perfect for game day, and they are delicious for anybody to enjoy, thanks to a delicious vegan nacho cheese sauce.
The secret’s in the sauce, friends!😉 This recipe uses my vegan queso, which is basically vegan nacho cheese sauce.
These would be great for watching football!
How to make vegan nachos
First, gather your ingredients.
Ingredients
For tastiest results, always use the best quality ingredients you have access to.
To make this vegan nachos recipe, you will need the following:
- cashew cheese (more decadent, creamy), OR vegan queso – prepared from linked recipe (lighter cheese, pictured)
- olive oil
- onion
- bell pepper – any color
- mushrooms
- corn
- canned black beans
- chili powder
- garlic powder
- onion powder
- cumin
- salt and pepper
- your favorite tortilla chips (We love the ones from Costco – Kirkland organic tortilla chips)
Cooking the veggies
Next, make the vegan nachos seasoned veggies. To do this, heat a large skillet to medium heat and add the olive oil. Then add in the onions, peppers and mushrooms. Toss and cook the veggies until they are soft.
Then add in the corn. Toss and cook it all together for a few minutes then add in the black beans.
In a small bowl combine the spices with some salt and pepper. Add the seasoning blend to the veggie and black bean mixture and toss and cook that all for a few more minutes. Remove it from the heat and let it cool.
Heating the chips (opitional)
Preheat the oven to 350 degrees and arrange the tortilla chips on a sheet pan. Heat the chips for 5 minutes in the oven. Then remove.
Assembling vegan nachos
To assemble vegan nachos: Place half of the chips to the side. Layer on the black bean and veggie filling over the top of the chips remaining in the pan. Top with a drizzle of the vegan queso.
Layer on the rest of the chips, the remaining balck bean and veggies mixture and another drizzle of the vegan queso sauce.
Serve the vegan nachos with a little extra vegan queso on the side. Top with your choice of toppings and enjoy!

- ½ yellow onion – peeled and diced
- 1 bell pepper – green or red , diced
- 1 cup sliced mushrooms
- 1 cup corn
- 15 ounces black beans (one 15 ounce can – drained and rinsed)
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 12 ounces tortilla chips
Toppings
- Vegan queso / vegan nacho cheese sauce (lighter, lower calorie)
- OR cashew cheese (creamier, more decadent)
- Diced tomatoes
- Cilantro
- Green onion
- Avocado

For best taste, I recommend using the cashew cheese. It is decadent, creamy and oh so cheesy! For still delicious flavor with lighter nutritional profile, the vegan queso is a great option (shown in photos). Or if you have both in the fridge, feel free to combine them.
