How to make oven roasted potatoes
First, gather your ingredients.

To make this oven roasted potatoes recipe, you will need the following:
- Yukon gold potatoes (or you can use reds or russets)
- garlic powder
- salt and pepper
- oregano
- basil
- cooking spray (I am using avocado oil in a mister)
Making oven roasted potatoes
First, preheat your oven to 400 degrees Fahrenheit.
Next, add diced potatoes to a baking sheet lined with parchment, and give the potatoes a spray.
Add salt, pepper, garlic powder, oregano and basil, and toss to combine and evenly coat the potatoes.
Cook at 400 degrees until brown and crispy, about 35 to 40 minutes. Keep an eye on them, and cook until they get to your preferred level of brown and crispy. My perfect version looks like this.
Carefully toss the potatoes half way through with a flipper to ensure even cooking. Remove from the oven, and serve immediately.

- 1.5 pounds potatoes (diced into 1 inch pieces – gold, red or russets)
- 1/2 teaspoon garlic powder or granulated garlic
- 1/2 teaspoon salt or more, to taste
- 1/4 teaspoon pepper
- 1/2 teaspoon oregano dried
- 1/2 teaspoon basil dried
- cooking spray (I am using avocado oil cooking spray)
Instructions

Preheat your oven to 400 degrees Fahrenheit.

Add diced potatoes to a baking sheet lined with parchment, and give the potatoes a spray.

Cook at 400 degrees until brown and crispy, about 35 to 40 minutes. Toss them half way through with a flipper to ensure even cooking.

Carefully remove from oven when desired crispiness is reached, and serve hot.

Any type of cooking spray works with this recipe. I would recommend one with mild, neutral flavor. Avocado oil is my favorite to use. I would not recommend any of the flavored cooking sprays, such as butter flavor.
