How to make homemade vegetable soup

For best taste, always use the highest quality ingredients you have access to.

Ingredients

  • oil or use cooking spray
  • yellow onion
  • celery
  • carrots
  • frozen corn
  • baby lima beans, frozen or fresh
  • canned diced tomatoes 
  • canned tomato sauce 
  • potatoes (I like to use baby red or golden potatoes to avoid peeling, but you can use any type, even sweet potatoes if you prefer)
  • water + Better Than Bullion Vegetable Base (or veg stock/ broth, other broth/ stock of choice)
  • salt and pepper

Cooking homemade vegetable soup

Cook the onion, celery and carrots in the oil over medium heat until tender, about 5 minutes.

Add the broth, plus all other ingredients, and bring to a boil.

Cook until potatoes are tender, about 15 to 20 minutes, stirring occasionally.

Taste test to see how much salt and pepper needs to be added. (This will vary greatly, based on how much salt is already in your broth/ stock, tomatoes and tomato sauce.)

Storing leftover vegetable soup

How long is homemade vegetable soup good in the fridge? Store leftovers in an airtight container in the refrigerator for up to 5 days.

Can you freeze vegetable soup? Yes! This vegetable soup freezes well, making it a great recipe for leftovers. To store, allow the soup to cool and transfer it to an airtight container. Store in the freezer for up to 3 months.

Ingredients

  • 1/2 Tablespoon oil or use cooking spray
  • 1/2 yellow onion diced
  • 2 stalks celery diced
  • 1 cup carrots diced
  • 1.5 cups frozen corn
  • 1 cup baby lima beans frozen or fresh
  • 1 can diced tomatoes 14.5 ounce
  • 1/2 can tomato sauce 14.5 ounce
  • 2 cups diced potatoes I like to use baby red or golden potatoes to avoid peeling
  • 4 cups water + 1 1/3 Table spoon Better Than Bullion Vegetable Base or veg stock/ broth
  • salt and pepper to taste
