- celery
- carrots
- frozen corn
- baby lima beans, frozen or fresh
- canned diced tomatoes
- canned tomato sauce
- potatoes (I like to use baby red or golden potatoes to avoid peeling, but you can use any type, even sweet potatoes if you prefer)
- water + Better Than Bullion Vegetable Base (or veg stock/ broth, other broth/ stock of choice)
- salt and pepper
Cooking homemade vegetable soup
Cook the onion, celery and carrots in the oil over medium heat until tender, about 5 minutes.
Add the broth, plus all other ingredients, and bring to a boil.
Cook until potatoes are tender, about 15 to 20 minutes, stirring occasionally.

- 4 cups water + 1 1/3 Table spoon Better Than Bullion Vegetable Base or veg stock/ broth
- salt and pepper to taste
