This halibut one pan dinner with asparagus, red pepper and summer squash is the perfect no fuss dinner for busy families. Back to school season is in full swing in our house. And for a lot of moms, back to school is kind of like a new year. It’s a fresh start with new possibilities.
We are resolving to feed our family fresh delicious family dinners with as little fuss as possible. Can I get an amen from all the mamas out there?!🙌🏻 That is why this one pan dinner is perfect! Everything cooks together, which is super convenient. But it is also super delicious how all the flavors meld together.
To make it, I just start by placing all the veggies on the pan and giving them a light drizzle of some olive oil, plus salt and pepper. The halibut goes right on top of that. I brush it with some olive oil. I use the brush to keep my hands clean, but you could also spread the oil with your hands. Next I go ahead and season up the fish with one of my favorite seasoning blends – OLD BAY.
Using a blend is super simple, ready to use, and it takes the guess work out of things.
And the OLD BAY brings back all my childhood memories.💖 My mom used this to season seafood growing up. And I love it so much!
OLD BAY is great on seafood, but you can use it on so much more than that: chicken, veggies, fries, burgers, soups. The possibilities are endless. It’s perfectly blended bold and zesty combination of 18 herbs and spices that I personally have never found a substitute for. I added some sliced lemon for additional flavor. 😋 Then I cooked everything in a preheated 400 degree oven for about 20 minutes. Note: My asparagus was on the thinner side. If you are working with thicker asparagus, you can give the asparagus a head start on its own for 5 or so minutes before piling on the fish and other veggies.
The result? A really delicious and healthy meal that comes together really quickly.😍👌🏻 This can be a complete meal on its own. But you could also serve it with some crusty French bread, rice or plain quinoa (shown in one of the photos above).

Halibut One Pan Dinner with Asparagus, Red Pepper and Summer Squash
This halibut one pan dinner with asparagus, red pepper and summer squash is the perfect no fuss dinner for busy families. | APinchOfHealthy.com
Ingredients
- 3 to 4 halibut filets - one per person (mine were 6 ounces and about an inch thick)
- 1 pound asparagus (tough white-ish ends removed)
- 2 yellow summer squash, roughly chopped
- 1 red bell pepper, roughly chopped
- 2 Tablespoons olive oil
- salt and pepper for the veggies
- 1 1/2 teaspoons OLD BAY seasoning (more or less, to taste. I used about 1/4 teaspoon per filet)
- 1 lemon, sliced
- Fresh parsley for optional garnish
Instructions

Add the veggies to the pan, and toss with a drizzle with about olive oil plus salt and pepper.

Place the halibut filets on top.

Brush on a little olive oil (about 1/4 teaspoon per filet), and sprinkle with Old Bay seasoning.

Add lemon slices.

Cook in a preheated 400 degree over for about 20 minutes (this might vary, depending upon the thickness of your fish).

Serve immediately and enjoy!
