But it is also super delicious how all the flavors meld together.

To make it, I just start by placing all the veggies on the pan and giving them a light drizzle of some olive oil, plus salt and pepper. The halibut goes right on top of that. I brush it with some olive oil. Halibut One Pan Dinner with Asparagus, Red Pepper and Summer Squash

Ingredients

  • 3 to 4 halibut filets - one per person (mine were 6 ounces and about an inch thick)
  • 1 pound asparagus (tough white-ish ends removed)
  • 2 yellow summer squash, roughly chopped
  • 1 red bell pepper, roughly chopped
  • 2 Tablespoons olive oil
  • salt and pepper for the veggies
  • 1 1/2 teaspoons OLD BAY seasoning (more or less, to taste. I used about 1/4 teaspoon per filet)
  • 1 lemon, sliced
  • Fresh parsley for optional garnish

Instructions

  1. Add the veggies to the pan, and toss with a drizzle with about olive oil plus salt and pepper.

  2. Place the halibut filets on top.

  3. Brush on a little olive oil (about 1/4 teaspoon per filet), and sprinkle with Old Bay seasoning.

  4. Add lemon slices.

  5. Cook in a preheated 400 degree over for about 20 minutes (this might vary, depending upon the thickness of your fish).

  6. Serve immediately and enjoy!
