Today I am sharing a tangy homemade dressing that I love on a good Greek salad – Greek red wine vinaigrette.
This actually tastes a lot like the vinaigrette at Zoe’s Kitchen, one of my favorite restaurants. It is a chain now, but did you know the original Zoe’s is here in Birmingham, AL?!
This dressing is sooo delicious, and I have used it in so many of my other recipes:

Ingredients
The ingredient list is pretty simple, and you will likely already have most, if not all, of these ingredients already in your pantry.
To make this red wine vinaigrette recipe, you will need the following:
- red wine vinegar
- olive oil
- water
- garlic powder/ granulated garlic
- dried oregano
- dried basil
- salt and pepper
How to make red wine vinaigrette
Measure each ingredient, and add to a mason jar (or other container with a tight-fitting lid).
Shake to combine.
Alternatively, you can make this in a small bowl, and whisk the ingredients together.
Note: this recipe will separate after sitting. Note: dijon mustard is my emulsifier of choice, but I like this recipe better without it.
Also, store in the refrigerator, and take out 15 to 30 minutes prior to using to bring to room temperature. Why? The olive oil tends to solidify in the fridge. Bringing it to room temperature liquifies it again.

The extra virgin olive oil made it taste too bitter for my taste buds. I swapped it for a lesser intense flavored oil.

Hi Sheri! You can sub your favorite oil, of course, as you mention. However, unless I am misunderstanding you, your olive oil may have gone rancid/ bad. It will taste bitter like that when it goes rancid. Tips for preventing that here: https://www.marthastewart.com/1536414/best-way-store-olive-oil

I added a bit of honey to mine to make it a bit sweeter! About half a tablespoon to start with then tweak from there. Definitely give it a try if you have little ones!

Is there a substitute for the red wine vinegar? I have white wine vinegar 2 bottles that I don’t use often also have a ton of other vinagers lol I’m so sad I live in Kansas City and the closest Zoe’s to me now is in Arkansas which is super super far….

Hi Erica! White wine vinegar will still taste good and make a great tasting dressing, but it won’t taste as much like Zoe’s. For the Zoe’s-like flavor, you are going to want the red wine vinegar.

Can this dressing cube left in the pantry? Or does it need to be refrigerated?? If left in pantry, how long do you think until it goes bad?

Hi Maria! It would probably be just fine if left out for a day or so, inadvertently. I do keep mine in the refrigerator, though.
