You will need a cast iron skillet for this recipe. The even heat distribution makes for the best filet! These pans are very accessible and affordable. You can get them just about anywhere – at Walmart, Amazon (affiliate linked), etc.

They are well worth the investment, in my humble opinion. Cast iron pans are very versatile, last forever and a staple in any cook’s kitchen!

How to Make Cast Iron Filet Mignon

First, gather your ingredients.

To create this cast iron filet mignon recipe, you will need:

  • Filet steaks
  • Avocado oil
  • Coarse sea salt
  • Garlic powder
  • Black pepper

For those seeking the ultimate culinary experience, consider enhancing your steak with a touch of herbed butter or fresh herbs, like rosemary.

If you’re aiming for that perfect sear, ensure your steaks are at room temperature before cooking and patted dry with a paper towel, prior to seasoning.

Cooking Cast Iron Filet Mignon

Cast iron filet mignon is not just a dish, it’s a journey to the peak of culinary excellence, ideal for a special occasion like date night that calls for something extra special. Follow these straightforward steps for the best results:

Preheat your cast-iron skillet over medium-high heat on the stove, and preheat your oven to 365 degree F. You want to make sure that your cast iron skillet is hot enough to create a good sear on the outside of the steak while keeping it tender and juicy inside.

While the pan is preheating, season the steaks. Pat each steak dry with a paper towel. Coat each steak with a high smoke point oil, like avocado oil, to ensure a perfect sear without smoking out your kitchen.

Then season the steaks well. Kosher salt, black pepper, and garlic powder provides a delicate flavor that enhances the natural taste of what is arguably the most tender cut of beef.

Sear the steak on the preheated cast iron pan, ensuring each side gets enough time on the hot surface to develop that beautiful crust that steak connoisseurs adore. I do about 5 minutes on the first side, and 2 to 3 minutes on the second side.

After searing, transfer the skillet to your preheated oven. This step is crucial for achieving the ideal internal temperature without overcooking.

This method, known as the stovetop-to-oven method, is a foolproof way to achieve medium doneness (or doneness of your preference, with adjustments) while preserving the juicy, tender interior.

Use a meat thermometer to ensure perfect results every single time. And please adjust cook time for thicker steaks, or preference of done-ness. For medium cooked steaks at medium thickness, cook for about 10 minutes. For rarer results, reduce this according to the thickness of your steak, usually about 7 or 8 minutes.

Finally, rest your steak. Tip: Rest on a plate, not the hot pan! Steaks left on a hot pan will continue cooking, and we don’t want that.

This important step allows the juices to redistribute, ensuring each bite is as mouth-watering as the last. You can cover the steak in aluminum foil, or leave it uncovered. Just give it enough time to rest, ensuring the retention of moisture and flavor.

Leftovers

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Always use common sense and good judgment when it comes to leftovers, though! If something looks or smells funky, don’t eat it.

Ingredients

  • 2 filet steaks mine were around 7 ounce each, medium thickness
  • 2 teaspoons avocado oil 1 tsp per steak
  • 1/4 teaspoon coarse sea salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat the cast iron skillet over medium high heat on the stove, and preheat the oven to 375 degrees Fahrenheit.
  2. Season the steaks. Mix the garlic, salt and pepper in a small bowl and stir to combine. Coat each steak with a teaspoon of avocado oil, rubbing on both sides to coat. Sprinkle the seasoning on both sides of the steak, and use your fingers to press it into the oil to make it stick.
  3. Sear the steak. Place the steaks in the skillet and cook for about 5 minutes on the first side, 3 minutes on the second side
  4. Transfer the skillet with the steaks into the preheated oven for about 10 minutes for medium cooked steaks. (Note: this may vary based on the thickness of the steaks. Mine were thick, one was about and inch and the other was about an inch and a half.)
  5. Remove steaks from oven, and use tongs to carefully remove them off the skillet onto a plate to rest for about 5 minutes prior to serving.

Recipe Notes

Nutritional information is approximate and was calculated using a recipe nutrition label generator. 

Steaks were approximately 7 ounces each and medium thickness. You may need to adjust cook time accordingly. For example, thicker steaks cook an extra minute or two. And rarer cooking preference, decrease oven time by 2 minutes or so.

For resting, be sure and remove steaks from the hot pan. Otherwise, they will continue to cook and get overdone.
