Today marks 52 weeks (1 whole year!) of inking up with Jenn for her weekly WIAW link party. Cue the confetti! I have enjoyed these weekly day-of-eats posts, and I hope you are enjoying them as well.

For breakfast I took some inspiration from Brittany and had this yummy open-faced egg (2pp) sandwich with avocado (1pp) and tomato on light wheat toast (1pp). Her method for making an over-medium egg worked great.
In the past I would try flipping my egg over, whispering a prayer that I wouldn’t break the yolk. Using steam and a lid was so much easier. Thumbs up!
For snack I had a banana with some PB2 (1pp) to get me through a morning conference call.
I am not at all opposed to regular peanut butter. But if you are wanting a lower-points/ lower-calorie fill in, this does the trick.
For lunch I heated up some leftover Skinnytaste chicken enchilada soup (7pp) that I made over the weekend.
I made many modifications to the recipe, like making it on the stovetop rather than the slow cooker, and using rotisserie chicken breast. I also added some diced avocado on top (1pp). It was very good!
Side note: I just saw that Amazon shipped my preordered Skinnytaste Cookbook. I can’t wait!
For dessert I made some coffee in my new mini French Press (obsessed!) with half-and-half (1pp) and two pieces of dark chocolate (2pp). The mini French Press is perfect for making a single cup of coffee.
For snack I had a piece of pumpkin bread (4pp). I am testing a new recipe (coming soon!).
And I did just eat one slice, even though the photo was of the entire loaf after it came out of the oven! It was really good, even if I do say so myself.
For dinner, I pulled some leftover spaghetti sauce (4pp) out of the freezer. I made some whole wheat noodles (4pp) to go with it, plus some baguette (2pp).
