Welcome to What I Ate Wednesday! Where I link up with Jenn and share a day of my eats. This particular day was very busy with lots of cooking and recipe testing. So you’ll get to preview some of my upcoming recipes for the blog.
I woke up pretty hungry. Breakfast was two eggs (4pp), toast with butter (3pp), two cups of coffee with half and half (2pp) and a banana.
I had childcare lined up for the day, so I was a busy bee…writing, testing and photographing recipes. I was working on my roasted red pepper hummus around lunch time, and I snagged several pita chips and veggies with hummus (estimate 4pp). What can I say…it takes several tries to get that “perfect bite” photo.
I didn’t actually eat lunch until about 2pm. So I kept it light with a protein shake (5pp) and a side salad with tomatoes, cucumbers, feta (1pp) and my balsamic vinaigrette (1pp). I am not a big meal replacement person…because I like to chew things! I mostly use them out of convenience. But when I have one, I usually pair it up with some sort of side item.
For dinner I was also testing out a recipe – healthy lasagna soup. It was a winner! A dollop of ricotta, parmesan and mozzarella makes it seem a lot more indulgent than it really is. YUM. I cannot WAIT to share this one with y’all. 8pp for the bowl. And I had a piece of baguette (2pp).
