Happy What I Ate Wednesday, y’all! Every Wednesday I link up with Jenn and share a day of eats. I do include Weight Watchers PointsPlus with my posts. I basically use WW for portion control. I am mostly a clean eater (although not perfect!), and you can read more about my food philosophy, if you are curious.
I took these photos on Monday, and it was a very busy day! I started the day with two cups of coffee (1pp for half and half).
When my son woke up, the first words out of his mouth were, “Momma, I want green juice.” (<- AKA, a green smoothie)
I am estimating 2pp for my half. I went to a women’s event at my church later that morning. I got a few snacks – some fruit a couple of mini muffins and a bite of chocolate cake (estimating 4pp for the whole plate). Forgive the small, blurry iPhone photo!
By lunch time I was testing and photographing my latest recipe – raspberry vinaigrette. So I made myself a salad with some chicken (4pp), berries, spinach, feta (1pp) and the dressing (2pp).
A little later I had my usual iced coffee (1pp) and two pieces of Dove dark chocolate (2pp).
And then the dreaded afternoon snack attack hit. I had two Tagalongs – you know, the Girl Scout Cookies with chocolate and peanut butter. NOT the best choice, but my husband bought them from a coworker’s kid. I could not resist. When I tracked them, they weren’t too bad points wise (4pp for two). I also had two clementines (not pictured).
For dinner I needed to use up some leftover rotisserie chicken, so I made homemade chicken noodle soup (6pp) and grilled cheese sandwiches (4pp – not pictured).
How do you use up leftover chicken?
Do you have Girl Scout cookies in your house right now?
