I do include Weight Watchers PointsPlus for these WIAW posts. But I am not your typical Weight Watcher. I would say I am a clean (but not perfect) eater first, and I use Weight Watchers to help me control my portions. You definitely do not have to be a Weight Watcher to enjoy my WIAW posts or my recipes.
Let’s just get right on to the eats, shall we?! For breakfast, I had one of my clean ingredient blueberry oat muffins (4pp), an egg (2pp) and a red pear. Plus coffee (always!) with half and half (1pp for two cups).
For lunch I was attempting to develop another recipe – zucchini noodles a la the spiralizer (<- affiliate link) with a creamy garlic tomato sauce and chicken. It may look pretty in the picture, but it was a FAIL.
This also explains the silence on the blog. If a recipe doesn’t turn out quite right, I am not going to post it!
My mistake? I cooked the zoodles IN the sauce, and that was a mistake. Like many other veggies, zucchini gives off liquid when it cooks down, and it messed with the consistency of my sauce. It thinned out the sauce way too much. So back to the drawing board on this one.
I did eat slightly more than what I would consider a serving, so my PointPlus would be about 11pp.
And then I had two oatmeal chocolate chip cookies (6pp). These were leftover from a church event that I made them for last weekend. And now I am stuck with leftovers.
I can. not. keep. these. cookies. in. my. house! Over the course of the afternoon I ate two more (another 6pp!). Just becasue they were there. Sigh.
I will say that the stress of my employment situation has affected my eating habits. I have been stress eating, which is bad. And my weight has been creeping up, which is depressing.
I did make a pretty healthy dinner – SkinnyTaste chicken enchilada soup (7pp) in the slow cooker.
It was really good. And we had some of my skillet corn bread (3pp) to go with it.
So as you can see I went a bit overboard for the day. What can I say…it happens! Unfortunately, it has been happening a little too much lately too. Those cookies certainly didn’t help either. I may make my husband take them to his work on something.
