I hope you had a great weekend! Today I am sharing my meal plan for the week, plus I am doing a Meal Inspiration Monday link up.
We have some plans Friday night, so there will be one dinner out. The rest of the meals for this week are old favorites. I need to be sure and add a new recipe to try for next week. When I am busy I tend to stick to my oldies but goodies. Maybe I will find something good from those of you who link up. More on that in a sec!
I have one recipe link I can share, and it is one that I make pretty often – Turkey vegetable soup from Cooking Light. It is tasty, healthy and even my toddler likes it. It also makes great leftovers. I do use fresh garlic in mine, rather than bottled that the recipe calls for.
Also, when I make my meatloaf, I always put the other half in the freezer. It comes in handy for a quick meal, which works well particularly on busy Mondays. I am taking advantage of that freezer portion this week. I just let it thaw in the fridge overnight. All I have to do is reheat it in the oven and make a couple of sides to go with it. Easy peasy!
For lunches, I almost always eat leftovers of the meals shown above. A lot of times I will transform them into a salad (like leftover meat over greens). Occasionally I will make a sandwich.
My breakfasts consist of one of the following: protein shake, smoothie, oatmeal, eggs, or egg white sandwiches. Sometimes I will have a bagel thin or English muffin spread with nut butter (or PB2).
