Monday – Lentil and black bean Chili (Weight Watchers, vegetarian recipe)
Tuesday – BBQ slow cooked pork, baked potatoes, green beans
Wednesday – Baked chicken, zucchini and couscous
Thursday – Poppyseed chicken casserole, rice, lima beans
Friday – BBQ sandwiches and oven fries
Saturday – Spaghetti and garlic toast
Sunday – leftovers
I am carrying over one meal from last week that I never made since plans changed. I ended up going to dinner with two of my girlfriends, so I never made the spaghetti that was on the menu last week. So that got carried over.
My new recipe to try is the lentil and black bean chili, which is a Weight Watchers recipe. You may have to be a member to view that linked recipe. It is new to me, so I will have to let you know how I like it.
The pork roast will feed us twice this week – once as a stand alone, and a second time as a BBQ sandwich.
