Between all the holidays traveling and merry-making…I am all about quick and easy dinner options that my whole family will love. These verde chicken soft tacos are perfect for that!👌🏻
I make the cilantro lime ranch dressing ahead of time.
Side note: I love having that extra dressing to put on salads, veggies, tortilla chips, etc. It is soooo good! 😋
So that when meal time rolls around, all I have to do is make the easiest Mexican shredded chicken of all time. You can do that on the stovetop, in your Instant Pot, or your slow cooker.✅✅✅🤗 I have been preferring my Instant Pot lately, but the other two methods work well too! And the rest is assembly.💁🏼♀️
And for this particular recipe I use salsa verde. My favorite brand at the moment is the Trader Joe’s one. Here’s a snapshot of the bottle to help you find it in the store quicker.
It seasons the chicken to perfection, along with some salt and pepper. 👌🏻
I use one jar for the whole recipe – two Tablespoons for the dressing, and I use the rest of the jar to pour over the chicken prior to cooking. And it works out great!
When the chicken is cooked, I shred it with two forks. Then your family/ friends/ dining buddies can load them up however they want to. First I added avocado slices.
Then I added some diced red onion, crumbled queso fresco…and topped the whole thing with that crazy-delicious cilantro lime ranch.
And let me tell you, that is one heck of a flavor combination.😋 💃🏼I hope y’all enjoy it as much as we have!

Verde Chicken Soft Tacos
These verde chicken soft tacos with cilantro lime ranch are an easy dinner that is perfect for busy nights when you need a quick meal.
Ingredients
- 8 flour tortillas (or other tortilla/ shell of your choice)
- 1 to 2 avocados, sliced
- 1/4 red onion, diced
- 1 pound Mexican shredded chicken ( I use at least a pound of boneless skinless chicken thighs)
- 1/3 cup queso fresco, crumbled
- Cilantro Lime Ranch
Instructions

Prepare a batch of cilantro lime ranch dressing. I prefer to do this the day/ night before, but you can make it on the spot if you wish.

Cook the Mexican shredded chicken, according to your preferred method using salsa verde or salsa of your choice. (I recommend Instant Pot method, but slow cooker and stovetop work great too!)

Add shredded chicken to a flour tortilla, and layer on the other toppings as desired.

Note: One pound of chicken will yield about 6 to 8 tacos.
