I debated whether or not to even DO a What I Ate Wednesday post this week. For one, it has been a really hard week with finding out that my day job is going away.
Between updating my resume, talking on the phone about job leads, looking into (less expensive, less frequent) child care alternatives for my son, transitioning all my work away, shredding old files, etc…I have been flying by the seat of my pants with my eats. And I have not been tracking my Weight Watchers points at all…although I will attempt to piece that together for the sake of this post.
Add to that the fact that Jenn, our lovely WIAW link-up hostess, has been contemplating pulling the plug on her weekly WIAW linkup party. Actually, the plug may be officially pulled…I am not even sure.
But for better or worse, here is my cray cray, imbalanced and random day of eats.
Breakfast: yogurt (3pp), coffee with half and half (1pp for two cups) and a pear.
Mid morning, I was working on my latest recipe – Ginger Citrus Pear Smoothie (1pp), and I had to taste test, of course! I drank the whole thing.
Then around lunch time I was searching our (bare) fridge, and nada. So I ate some chips (4pp) and salsa!
And a couple of hardboiled eggs with sriracha (4pp).
And then some iced coffee (1pp) and chocolate (2pp)…
Late afternoon, not pictured: a spoon full of peanut butter (3pp?) on the way out the door to pick up my husband.
My husband was sick and left his work to go to a doctor’s appointment on Monday. On the way back home, his car died on the middle of Highway 280 (!!!). For those of you not local to Birmingham, this is like one of (if not THE) busiest roads in Birmingham.
I have to admit, it did feel a little like the universe was kicking us while we are down. But! There are always silver linings. So I try to focus on those.
Silver lining #1: since he was sick, it was not rush hour. If he had been driving home from work, like he would have been on a usual day, it would have been at rush hour. And 280 is like gouge-your-eyes-out-terrible at rush hour on a normal day.
Silver lining #2: Since my job is going away, it wasn’t too hard for me to break away from work (AKA, my all-day job search and food-blogging) to go pick him up.
Silver lining #3: My sweet in-laws gave us one of their cars to borrow until he can get his repaired (the shop had to order a part to fix it). My in-laws are the best. I love them!
I was able to redeem my eats a little with a good dinner. I made a modified version of Skinnytaste chicken and lentil soup, and I had a larger serving (8pp).
And I made a pan of skillet corn bread (one piece is 3pp) with butter (1pp) to go with it.
Okay, y’all I don’t really know what to do with What I Ate Wednesdays, especially if Jenn cancels her link up.
WIAW has kind of become a thing over here at A Pinch of Healthy. I think a lot of you guys found me independent of Jenn because you love my sample days of eats. I would LOVE to hear you guys weigh in…should I continue these sample days of eats?
I have built up an archive (72 weeks!) worth of eats, and I often just repeat the same stuff. Are you guys tired of What I Ate Wednesday? It will not hurt my feelings. I would actually love some feedback on where I could best focus my energy for this blog.
