Welcome to What I Ate Wednesday, where I link up with Jenn and share a sample day of eats.
Just to give you some context – I have been pretty sick over the last few days. So my zest for eating and cooking hasn’t quite come back.
For breakfast I had my go to cinnamon maple oatmeal. I also had a banana and some coffee with half and half (1pp for two cups).
For lunch I rummaged through the leftovers in the fridge. I had some leftover barbecue chicken on a light wheat bun (2pp) and a side salad with tomatoes, 2% cheddar (1pp) and my homemade balsamic vinaigrette dressing (1pp).
Photography note: I love when happy accidents happen that make my photos look more appealing. Like that serendipitous sauce drizzle! I did not plan that, but I love how it looks in the photo.
After lunch I had some coffee (1pp for half and half) and some Dove dark chocolate promises (2pp).
By the time snack rolled around, I was pretty hungry. So I had a light Flatout wrap (2pp) with some peanut butter (3pp) and a banana. YUM. I forgot how much I love this snack. (Side note: I also eat this a lot with PB2, if I want to go a little lighter)
Dinner was easy, as is typical for Monday nights (<- the actual day I took these photos). Plus, with being sick I didn’t feel like making anything too fussy. So we had store bought rotisserie chicken, and I roasted some potatoes (4pp) and made some limas (2pp) to go with it.
And this photo was taken on the fly, with absolutely ZERO effort made toward photographic excellence. I was doing good just to document AT ALL.
After I took this photo, a certain someone said, “Mama, I need you to take a picture of my plate.” When I did, he exclaimed, “CHEEEEEEEESE!” with such enthusiasm. LOL!
