Welcome to another What I Ate Wednesday, where I link up with Jenn and share a day of my (mostly) healthy eats.
I get a lot of fellow bloggers on Wednesdays. I would encourage you to check out the guest post I did earlier this week over at Alabama Women Bloggers. I am honored to be their blogger of the month for February, so I will be doing a series of guest posts over there around the theme “Adore.” My first post is How to Love Blogging Again.
For all of you who came for the food, let’s get to the good stuff, shall we?! 🙂
(Side note: I include WeightWatchers PointsPlus for my eats since I am currently following their weight loss program.)
For breakfast I made a protein shake with almond milk (1pp), Orgain Chocolate Organic Protein Plant-Based Powder(4pp – Amazon affiliate link), a banana and some ice. I tried to get all fancy and do some slices of banana for the photo, but they stared to sink.
I also had some coffee with half and half (1pp).
I kind of missed my eggs at breakfast, so I had them for lunch! I had one whole egg (2pp), scrambled with a few whites (1pp), avocado slices (2pp), laughing cow light creamy swiss cheese (1pp) on light wheat toast (2pp). I ate that alongside a huge spinach salad with blueberries, goat cheese (1pp) and my homemade balsamic vinaigrette (1pp).
I had my usual post-lunch iced coffee (1pp) with a piece of Dove dark chocolate (1pp). They are making them in heart shapes for Valentines day…so cute!
For snack I had some light Wasa crisps (1pp) with two wedges of light Swiss laughing cow (1pp), a clementine and a banana.
I put the product boxes in the photo because I have had several Weight Watchers folks debate me on the PointPlus for these two items. I know these brands make different flavors and varieties, and this may not be true for all varieties: but the PointsPlus really are 2 wedges for 1pp and 3 crackers for 1pp. Put them in your tracker if you don’t believe me. 😉
Freezer meals just make me want to high-five my past self for making double and freezing for later. It helps SO much to have a freezer stash of emergency meals.
One last thing: be sure and enter to win a $165 Target gift card in my Valentines Give-Away! It goes through 2/9, and I am partnering up with several fellow Birmingham Bloggers.
What are your favorite make-ahead-and-freeze meals?
