Happy What I Ate Wednesday! Every week a link up with Jenn and share a day of my eats.
I know it’s Wednesday, and this is only my first post this week…eek! I haven’t posted anything since My 2015 Blogging Goals last Friday (worth a read, if you haven’t already seen it).
I have been working on a recipe that I had hoped to have up earlier this week. But it needs a few more adjustments. I would rather wait and get the flavor the way I want it, rather than just publish a so-so recipe. So stay tuned for that!
Since I do Weight Watchers, I share PointsPlus values for my eats. This particular day I did not track until I went to write this post. Oops! So I did end up using 3pp of my weeklies, which is actually not too bad.
Breakfast was a two-egg scramble (4pp) with white cheddar (1pp), turkey sausage (not enough to register points) and green onions. I also had coffee with half and half (1pp for the two cups).
A few hours later I was testing out that recipe I mentioned earlier. Coming soon: double chocolate mocha muffins!
I had a muffin (4pp) to taste-test.
For lunch I had a little single serving of chicken salad (4pp) from Costco, some Wasa light crackers (1pp) and a spinach salad with sweet peppers, feta (1pp) and my homemade balsamic vinaigrette (1pp).
Then I had an iced coffee (1pp) and a Dove dark chocolate promise (1pp).
That afternoon I had a Greek yogurt for a snack (3pp).
My parents and sister arrived into town that afternoon for a visit. My sister is attending some training for her new job, and my parents came along with her. I love when they visit!
So for dinner I made an old family favorite – meat loaf (5pp), mashed potatoes (3pp) and broccoli (recycled picture). I also had a roll (3pp – not pictured).
