Welcome to my weekly What I Ate Wednesday post, where I share a day of (mostly) healthy eats. Thanks to the lovely Jenn for hosting.
If you are curious about my style of eating, I am (1) not perfect and (2) not a big “rules” girl when it comes to eating. But I do have a few common sense guidelines that I try to stick to most of the time.
Also, I am currently following Weight Watchers. You definitely don’t have to be a Weight Watcher to enjoy my recipes. But I do provide PointsPlus in parentheses for my fellow Weight Watchers.
This week I have been trying to get back in the swing of things after lots of holiday indulging. For breakfast I had some cinnamon maple oatmeal (6pp) and some coffee with half and half (1pp).
There is something so warm and cozy about a hot bowl of oatmeal on a chilly day.
For lunch I scavenged my fridge for leftovers. I found some pulled pork (3pp), and I put it over a large baked sweet potato (6pp). I also made a spinach salad with raspberries, walnuts (1pp) and my homemade balsamic vinaigrette (1pp).
After lunch I had an iced coffee (1pp – recycled photo).
While I was preparing dinner, I had two dove dark chocolate minis (2pp – not pictured).
And for dinner we had blackened salmon (4pp) over garlic parmesan cheese grits (6pp) and green beans.
I still struggle with figuring out how to take night time pictures after all of that glorious natural light is gone.
I just wanted to wish you all a HAPPY NEW YEAR! 2014 has been a great year for me personally, and for that I am so thankful.
I must admit that I love fresh starts, though, and I am looking forward to 2015. As much as I used to make fun of new years resolutions, I am at a stage where I am embracing them…cheesy and cliche as they may seem. Because who couldn’t use a fresh start, ya know?!
