How is it already Wednesday?! And only eight days until Christmas?!
I’ve still got a lot to knock off my to-do list before the big day. But! I still managed to snap photos of a day of my eats to share with you all today.

Monday was one of those days where I woke up SO hungry. I must not have eaten enough for dinner the night before or something? Does this ever happen to anybody else?
So I ate a hardboiled egg with some sriracha (2pp – my go-to snack as of late). I was too asleep to remember to snap a pic, so here is a recycled one!
I am still using every chance I get to use my new blender. (<-Blendtec still has refurbished blenders on holiday sale, FYI!*). So I made a green smoothie for breakfast with almond milk (1pp), kale, banana, greek yogurt (2pp), pineapple and grapes.
Not pictured – I also had two cups of coffee with half and half (1pp).
I ran a few quick Christmas errands during my lunch break. As I was driving back from the mall, my car practically steered itself into Whole Foods.
I was having a major sushi craving, and I needed something quick. So I grabbed one of their brown rice sushi packs. I was able to snack a quick picture before I ate it while listening to a conference call for work. It was SO good! I have no idea how many points, so I estimated 11pp.
I have been working on a new Christmas biscotti recipe with cranberries, dark chocolate and rosemary. Yes, really – rosemary in something sweet! So I snagged a couple of those for snack (4pp for two) with a cup of coffee (1pp for half and half).
Dinner was pretty simple, as is typical for Mondays. I have not tried many new dinner recipes lately, mostly because of how busy we have been. Plus, my two year old decided to have an EPIC meltdown, so I had to hunt down another recycled photo.
Anyway, we had grill pan chicken (4pp for partial serving, split with the toddler), baked sweet potatoes (4pp) with butter (1pp) and broccoli.
