Thanks to Jenn for hosting the linkup! The link party has been a great way to share healthy eats with you, friends! Plus, I have used it as an opportunity to work on my food photography.
I happen to follow Weight Watchers, so I include points with my food posts. You do NOT have to be a Weight Watcher to benefit from my recipes. I tend to eat pretty clean, and you can read more on my food philosophy here.
This week, however, I happen to be doing Simply Filling to help get myself back on track after ALL the Thanksgiving treats. Basically you can eat any of the power foods without having to track points. Plus you get 49 extra weekly points for anything else that is not a power food. So I will only note points for my “extras” this week.
For breakfast I whipped up my latest green smoothie (recipe post coming soon). All ingredients are Simply Filling, which means I do not have to count points.
I also had my usual two cups of coffee with real half and half (1pp for the half-and-half in the two cups).
About mid-morning, I decided to multitask while completing some ethics training for my day job (watching training videos). I made a batch of hard-boiled eggs to grab as snacks during my Simply Filling week. They are good with some hot sauce or sriracha.
But sometimes I just hit them with a little sea salt and fresh ground black pepper. BOOM. So simple, yet so yummy.
For lunch I knew I had some leftover crock pot salsa chicken in the fridge. But I wanted something a little different. So I made these stuffed baked sweet potatoes with it. YUM. I tracked 2pp for some avocado and 1pp for some cheddar cheese.
After lunch I had my usual iced coffee (1pp).
For afternoon snack I had some DIY microwave popcorn (used canola oil in place of my usual coconut oil to follow Simply Filling)…
I was still feeling a little hungry, so I grabbed a yogurt too.
I have enjoyed my week of not tracking (other than extras).
