Happy What I Ate Wednesday! Where I link up with Jenn each week and share a sample day of healthy eats. I have been doing this for over a year, and I have built up a nice little day-of-eats archive here.
I include Weight Watchers PointsPlus, since I have followed their program to help shed the last 30 pounds (55 pounds lost in all since the birth of my son! More on that on my About page, FYI).
Breakfast was nothing fancy – just a banana, 3 frozen strawberries, some almond milk (1pp) and some vanilla protein powder (4pp) blended into a shake. I also had two cups of coffee with half and half (1pp for the two cups).
For lunch I made some roasted squash fries (2pp for oil) to go along with a leftover burger (8pp).
I cut my finger with the knife when I was prepping the squash. Eeeek! It was pretty bad, actually. It still starts bleeding every time I take the band-aid off. I am such a klutz sometimes! But not to worry – the fries were fine! 😉
After lunch I had my usual iced coffee (1pp) and a piece of dove dark chocolate (1pp) – recycled picture!
For snack I took some 2% Greek yogurt (2pp) and topped it with honey (1pp) and pomegranate. That was SUCH a good combination, by the way. I also had an apple. I love fall fruit!
For dinner I blackened up some salmon (5pp) and served it with broccoli and jasmine rice (4pp) with real butter (1pp).
After dinner, the chocolate brownie cookies were calling my name! So I had two of those (4pp). I used a picture from the recipe shoot, which shows three cookies. But I only ate two…promise!
I used some weekly (extra) points on this particular day. Totally worth it, though, especially for those cookies. Plus I had some activity points to balance that out a bit.
