Today and every Wednesday I linkup with Jenn for her What I Ate Wednesday link party, and I share a sample day of my (mostly) healthy eats.
I am really enjoying the tastes of fall right now! For breakfast I had a slice of my pumpkin spice bread (4pp) with one egg (2pp), an apple and some coffee with half and half (1pp).
I did not have a ton of options for lunch since it was time for me to go to the store for the week. But! I was able to make a tasty salad with mixed greens, blueberries, walnuts (1pp), my balsamic vinaigrette (1pp) and goat cheese (1pp). I also made a toaster sandwich on light wheat (2pp) with egg whites (1pp), laughing cow swiss (1pp) and avocado (1pp).
I had my usual iced coffee after lunch (1pp – recycled photo! I forgot to snap a pic).
During the afternoon I tested a new pumpkin cookie recipe. I had two cookies (5pp) and a glass of almond milk (1pp).
Yes, I realize there are three cookies in that photo. It just looked much nicer for the photograph. I only ate two, I promise!
Oh, and the taste of the cookies was good, but the texture was all wrong. It was way too cake-y for a cookie. So back to the drawing board on that recipe!
For dinner we had some Weight Watchers Pasta e Fagioli soup (8pp). A few extra points (one serving is usually 6pp) because I went back for seconds!
The photo was less than stellar because this time of year, all of my glorious daylight is long gone by the time we eat dinner.
I guess I could experiment with some artificial lights. Truth be told, dinner is just not my best photo-taking time! By then there is somebody else demanding my attention.
Oh well! I am sure many of you parents can relate. He did like the soup, by the way. 🙂
